Sometimes you just need to step away from your computer and do something else instead. Like make (and eat) banana bread.

Ingredients:

285g / 10oz plain flour
1 tsp bicarb of soda
1 tsp salt
110g / 4oz butter
225g / 8 oz sugar (you can replace some sugar with agave syrup or honey)
4 ripe bananas
85ml / 3 fl oz butter milk (or soya milk)
1 tsp vanilla extract
2 eggs

Method:

  • Preheat oven to 180 o c
  • Sift flour and bicarb of soda into large mixing bowl
  • Cream butter sugar together until light and fluffy
  • Add eggs, mashed banana, buttermilk and vanilla extract to butter and sugar mix
  • Fold in flour mixture
  • Grease loaf tin (8in x 5in) and pour in mixture
  • bake for about 45-50 minutes and then check by sliding a sharp knife into the centre.
  • Pull the knife out and if it is wet your banana bread needs more time.
  • Once ready, leave to cool in tin for a couple of minutes and then turn out onto a wire rack or similar for complete cooling.
