Sometimes you just need to step away from your computer and do something else instead. Like make (and eat) banana bread.
Ingredients:
285g / 10oz plain flour
1 tsp bicarb of soda
1 tsp salt
110g / 4oz butter
225g / 8 oz sugar (you can replace some sugar with agave syrup or honey)
4 ripe bananas
85ml / 3 fl oz butter milk (or soya milk)
1 tsp vanilla extract
2 eggs
Method:

Preheat oven to 180 o c

Sift flour and bicarb of soda into large mixing bowl

Cream butter sugar together until light and fluffy

Add eggs, mashed banana, buttermilk and vanilla extract to butter and sugar mix

Fold in flour mixture

Grease loaf tin (8in x 5in) and pour in mixture

bake for about 45-50 minutes and then check by sliding a sharp knife into the centre.

Pull the knife out and if it is wet your banana bread needs more time.

Once ready, leave to cool in tin for a couple of minutes and then turn out onto a wire rack or similar for complete cooling.
